Hummus Appetizer with Garlic Bread Dippers

Serves 12

6 slices of any Mrs Baird’s whole gain bread
2 whole cloves garlic, peeled (divided use)
15 ounce chick peas, drained
1⁄4 cup chicken broth
2 tablespoons tahini (see note)
1 teaspoon lemon zest
2 tablespoon lemon juice
1⁄4 teaspoon pepper
1 tablespoon olive oil
1 tablespoon chopped fresh parsley
1⁄4 teaspoon paprika

Toast slices of bread in a toaster or in the oven. Immediately after toasting, rub one clove of garlic lightly over one side of the bread. (One clove will be enough for 6 slices of toast.) Cut bread diagonally into quarters and place around the edge of a decorative platter. For hummus, process the remaining clove of garlic in a food processor or blender, until chopped. Add the chick peas, chicken broth, tahini, lemon zest, lemon juice, and pepper, and process for 15 to 20 seconds, or until mixture is smooth. Pour mixture into a decorative serving bowl. Drizzle the surface of the hummus with olive oil and sprinkle parsley and paprika on top. Place the hummus in the middle of the platter with the toasted bread triangles surrounding it. Watch it disappear!

Note: Tahini is a ground sesame seed paste, and can be found near the pickles/olives in the grocery or in the gourmet section. You may substitute 1 teaspoon of toasted sesame oil if you cannot find tahini.
