Serves 8
4 slices of any Mrs Baird's wheat bread, toasted
2 tablespoons margarine, softened
1 cup pitted fresh cherries (fresh or thawed frozen)
1/4 cup golden raisins
1/4 cup sliced almonds
1 cup lowfat 1% milk
1/4 cup frozen orange juice concentrate, thawed
Egg substitute equivalent to 2 eggs, or two eggs, lightly beaten
1/2 teaspoon almond extract
1/4 teaspoon nutmeg
Spread top sides of bread (toasted) with margarine. Cut bread into cubes, and place in a nonstick 8-inch square baking pan. Add cherries, raisins, and almonds, and stir to combine. In a medium mixing bowl, whisk together the milk, orange juice concentrate, egg substitute or eggs, almond extract, and nutmeg. Pour milk mixture over bread mixture and let stand 5 minutes before baking so bread absorbs the liquid. Bake in a preheated 350°F oven for 45 to 50 minutes, or until center is set. Serve warm.
