Healthy Baked Fish Sticks

Serves 4

Vegetable oil spray
3 slices of any Mrs Baird's whole grain bread, torn into pieces
2 green onions, thinly sliced
1 teaspoon salt-free lemon dill seasoning
1/4 cup buttermilk
1 pound catfish fillets, cut into 4-inch strips
6 ounces plain yogurt
2 tablespoons sweet pickle relish
1 teaspoon lemon juice

Preheat oven to 400°F.

Spray a baking sheet with vegetable oil spray. Place the bread in a food processor and process for 5 to 10 seconds to form soft bread crumbs. Add green onions and salt-free lemon dill seasoning and process for 1 to 2 seconds to combine. Place mixture in a shallow bowl. Pour buttermilk in a separate shallow bowl. Add catfish strips to buttermilk and let marinate for 5 to 10 minutes. Remove catfish from buttermilk and coat with breadcrumb mixture and place on prepared baking sheet. Bake for 10 to 12 minutes, or until catfish is cooked through. In a small bowl, stir together the yogurt, sweet pickle relish, and lemon juice and serve on the side.
