Serves 8
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh oregano
1 green onion, finely chopped
2 tablespoons lemon juice
1 tablespoon olive oil
1 clove garlic, minced
1 pound sirloin steak, cut into 3/4-inch cubes
1/2 red bell pepper, cut into 3/4-inch squares
1/2 green bell pepper, cut into 3/4-inch squares
1/2 red onion, cut into 3/4-inch squares
1 cup plain low-fat yogurt
2 tablespoons chopped fresh mint
8 Mrs Baird's Hot Dog Buns
In a shallow bowl or self-sealing bag, combine the parsley, oregano, green onion, lemon juice, olive oil, and garlic. Add the meat cubes and stir to coat. Marinate in
the refrigerator at least 30 minutes or up to 24 hours in the refrigerator. Soak 8 (8-
inch) wooden skewers in cold water to cover for at least 10 minutes. Alternate
meat cubes, red pepper, green pepper, and red onion on each skewer and grill over
medium-high heat for 1 to 2 minutes per side, or until desired doneness. In a small
bowl, whisk together the yogurt and fresh chopped mint. To present, place a
meat/vegetable skewer in a Mrs Baird's Hot Dog Bun. Carefully remove the
skewer by slightly squeezing on the bun to hold the ingredients, and then pull the
skewer out.
Serve with yogurt/mint sauce on the side.
