Texas Burger

Feeds 4 hungry Texans

Mrs Baird's Grillin' Thins
2 pounds 80/20 ground beef
8 slices thick quality bacon (2 slices per burger)
4 slices of Pepper Jack cheese
1 large avacado
Pickles
Lettuce
Tomato
Onions
Seasoned Bread crumbs
Emeril Seasoning
Pepper and Salt
Hickory chips- soaked in water. A handfull should be enough

Fire your gas or charcoal grill to 350-400 degrees. Form your patties sprinkling seasoning, bread crumbs, salt and pepper on both sides of patty. Make your bacon in a skillet and set aside. Grill onions in same skillet as bacon, removing all but 2-3 tsp of the bacon drippings. Remove the skin from the avocado and thinly slice; sprinkle salt to taste.

Add a few wet hickory chips to your grill and start grilling your patties, usually around 5 minutes per side. Add cheese to patties just before they're cooked to your liking. Lightly toast your Mrs Baird's Grillin' Thins on the grill in the final few minutes.

Assembly:

Get your Mrs Baird's Grillin' Thins bottom on a plate, pile your patty with cheese, add your avacado, lettuce, tomato, add your top slice of Mrs Baird's Grillin' Thins and enjoy your burger!
