Grilled Turkey Burgers with Chopped Veggies

Serves 4

1 teaspoon olive oil
1/2 cup diced celery
1/2 cup diced carrots
1/2 cup diced red bell pepper
1/2 cup diced mushrooms
1 teaspoon poultry seasoning
salt and pepper to taste
1 egg white, lightly beaten
1 pound lean ground turkey breast
4 Mrs Baird’s Hamburger or Sandwich Buns
4 leaves lettuce
1 Italian plum tomato, thinly sliced

Heat a large skillet over medium heat. Add olive oil and swirl to coat. Add celery, carrots, red bell pepper, mushrooms, poultry seasoning, salt and pepper, and sauté for 3 to 4 minutes, or until vegetables are tender, stirring occasionally. Place mixture in a large bowl and let cool for 5 minutes (you can put bowl in the refrigerator to speed up this process.) While mixture is cooling, gather remaining ingredients and preheat grill. Add egg white and ground turkey to the vegetable mixture and mix using your hands to combine. Shape mixture into 4 patties and grill for 4 to 5 minutes per side, or until turkey is cooked through. Build your burger. Serve with ketchup and mustard, if desired.
