Grilled Margherita Sandwich Supreme

2 Mrs Baird's Grillin' Thins
3 tablespoons mayonnaise
1 1/2 tablespoons pine nuts
1 large clove garlic, crushed
8 oz. fresh soft mozzarella cheese
4 oz. roasted red bell pepper strips
1 small Roma tomato, thinly sliced
Italian Spice blend, to taste (see below)
1 tablespoon Olive Oil
6 basil leaves

Combine mayonnaise, pine nuts and garlic in a mini-chopper and pulse until a medium coarse consistency, spread lightly on the inside of each Mrs Baird's Grillin' Thin. Lay 2 oz. of the mozzarella on two of the Grillin' Thin, over the mayonnaise mixture. Reserve the remaining 4 oz. mozzarella cheese.

In a bowl, place red bell pepper strips and sliced tomatoes. Add olive oil and Italian Spice blend. Gently turn all of the tomatoes and peppers.

Distribute half of the red pepper and tomato mixture on each of the sandwiches. Top each with three basil leaves and half of the remaining mozzarella and top with with the other two Mrs Baird's Grillin' Thins.

Warm sandwich on a Panini grill or in a dry skillet until warm (about 3-4 minutes). You do not need to turn the sandwich on the Panini grill yet will if using a skillet.

Italian Spice Blend: combine 1/4 tsp. each oregano, marjoram and sage with 1/8 each tsp. salt.
