Serves 6
1 tablespoon olive oil
1 tablespoon white wine vinegar
1 teaspoon lemon zest
2 teaspoons lemon juice
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
salt and pepper to taste
4 ounces cooked, peeled and deveined shrimp
4 ounces cooked crabmeat or lobster meat
1/2 cup finely chopped celery
2 green onions, thinly sliced
6 Mrs Baird’s Hamburger or Sandwich Buns, lightly toasted
6 leaves iceberg lettuce, torn into pieces
1 Italian plum tomato, thinly sliced
In a medium bowl, whisk together the olive oil, vinegar, lemon zest, lemon juice, dill weed, and garlic powder. Season with salt and pepper to taste. Add the seafood, celery, and green onions and stir gently to combine. To assemble, place leaves of lettuce in the bottom of the Mrs Baird’s Buns. Spoon the seafood salad mixture into each bun and garnish with slices of tomato.
Notes: You can use any variety of cooked seafood you like, including imitation crabmeat or lobster meat.
